Is the Methodist church having their annual bazaar this month? I always absolutely LOVE their chicken salad plates and the ladies do a wonderful job; however, I do not live in Demopolis and can no longer enjoy the lunch. Does any D'live-r happen to have the chicken salad recipe that they wouldn't mind sharing. I promise not to give it to anyone. I have tried making it before but it doesn't come close to the amazing chicken salad that the church ladies prepare and have quit trying. Please...please... share someone.

I'd love to hear it. I really thought that they ALL made the same recipe as it tastes the same from year to year. Maybe I'm just so excited to have it, I don't notice there is a difference. I would love to have your grandmother's recipe and if anyone else would like to share theirs....I just love a good recipe.
The secret in making a really good chicken salad is in how you cook your chicken! I will give you Suggie's recipe for the best chicken salad ever!
(I will tell you upfront, I use skinless, boneless chicken breast because I am lazy!)
1 Large package of chicken breast
6 Chicken bullion cubes
3 Stalks chopped/sliced celery
1 Tablespoon celery salt
1 Stick butter
1 Teaspoon pepper
Combine the above in a large cooking pot almost filled with water. Cooking time varies with the amount of chicken you use. Bring to a boil, taste the broth to ensure the taste. You may need to add a little salt, pepper or celery salt. Cut down the heat to med. When the chicken is done, remove it from the pot and sit aside. (Add rice or dumplins in the pot for a
tasty soup to serve later)
Chicken Salad
Chicken - cooked and cut into small pieces
6 boiled eggs - chopped very fine
3 stalks celery - chopped in small pieces
1 Cup sweet pickles - drained
2 Tablespoons of sugar (this is the secret: sprinkle the sugar on top of
the sweet pickles - then mix in with chicken, etc.)
Mayonnaise - I use Hellmann's Light.. any brand your family will like -
use enough mayonnaise to hold the chicken salad together.
(you do not need to add salt or pepper to the salad because the chicken has been seasoned while cooking)

Fred and I love chicken salad and this chicken salad was incredible! YUMMY!
Side note: Ethan and I were driving around waiting for the library to open and saw a lady carrying a stack of books on Wed. morning.
We stopped and asked if we could give her a lift. She seemed pleasantly surprised and accepted our invitation.
After some quick introductions, we were on our way to the UMC. As we rode in the direction of the Methodist church, she reminded us of the bazaar that would be starting around 10 AM.
When Ethan and I went to check on my husband, Fred, we related the story of the lady carrying books to the UMC bazaar. We told him her name..... Mrs. Kate Melton.
Boy, was he blown away. He said he knew Mrs. Melton! He had taught her at Livingston University many, many years ago.
Later on during the day, Fred and Mrs. Melton had a chance to catch up and discuss old times. Wow, what a fun person Mrs. Melton is! Bet she was a super teacher!
Just wanted anyone connected with Demopolis 1st United Methodist Church to know that the Sakon's had a fantastic time at the bazaar.
