I am looking for a recipe for fruitcake cookies. The one that I want had graham crackers in it. I think that it might be Icebox Fruitcake cookies, but I am not sure. I have found several recipes on the internet and in my cookbooks, but I cannot find the one that I am looking for.
I love my fruit cake cookies. Made from scratch with all the spices and candied fruit. I've made them for years and they are one of my families favorite. Have to double the recipe also. My husband loves them with coffee. I'll email the recipe Dear Roo.
Rhonda, maybe this is it or at least similar. I found it at southernfood.about.com. I like that site and recipegoldmine.com if you want to check them out. I hope this helps!

Mix crackers, fruit, raisins, dates, nuts, marshmallows and milk in large bowl. Press into 2 well-buttered loaf pans, or line pans with wax paper (can use disposable foil pans). Store in refrigerator three days before eating.
I had to stop and ask self,"Do I really need to be here", and self says,"Only in the cover of darkness."
