I'm looking for ideas on grilling steaks. I'm tired of the same ole steak. I've looked at all kinds of different recipes but I want to know how YOU grill them. My southern friends. How do you season them? I've tried a lot of different things from Jim Beam to garlic to just nothing. I know there are some good cooks on here. Please share. Thanks!

Salt, Pepper, Garlic, little bit of red pepper flakes, mixture of "What's this here" sauce (Worcestershire) A-1 and a little soy. Marinate for at least 30 min.
Also, Fleming (a prominent member that's no longer with us) posted a fantastic recipe that was great but I did a search for it and it no longer shows up....I'll have to find my hard copy and post it then. It's well worth trying and has a great taste.

Try your steak with a little EVOO - fresh cracked pepper corn pressed into meat. Grill for about 4 minutes on each side.
Make sure meat is room temp before placing on HOT grill that has been sprayed with no stick stuff.

I soak a small handfull of pecan hulls in water for about 30 minutes prior to grilling. When my charcoal is white and hot just before putting the grill down and the meat on, I toss these pecan hulls on top of the coals. Then I put down the grill and put on the meat. The smoke from the pecan hulls give the meat a flavor unlike you have ever tasted! I also do the same thing with walnut hulls, but the pecan hulls have the better flavor to me. I season with a little salt and fresh ground pepper.
That's my FAVORITE grilled steak recipe.

I like to use black pepper and crust my steak, its so yummy but its really SPICY.
We also use alot of fruit juices to marinade with, mixed with a little vinegar, throw a piece of the fruit on the steak when its almost done cooking and its excellent.
The best tip tho is to start with a room temp steak. And the cut of steak has a huge taste different too.

This, plus a healthy dose of kosher salt, is all a good steak needs or should have. The main thing is obvious, but often overlooked: start with a good cut of meat. Save the marinades for lesser cuts that need the tenderizing action of the acid in a marinade.
The other key is don't cook it too much. Anything beyond medium rare and you have ruined your dinner.

Our favorite seasoning for steak and chicken is Southern Flavor Garlic with a little Worcestershire sauce added on first. Use the long pronged fork and skewer it a few times then add the seasoning. The holes help get the flavor all through the meat without having to marinate. If it's a tougher cut of meat then make a marinate of the sauce and seasoning and marinate for a couple of hours. Don't overcook! Southern Flavor also comes in other great flavors like regular and Cajun.
I let mine sit in a mixture of Dale's overnight. I've also added beer to the Dale's mixture with salt and pepper. I just love a grilled steak! Happy grillin!
